Ingredients

For the stroganoff:

  • 1 tbsp olive oil
  • 500 g chicken breast or thighs, sliced
  • Salt & pepper
  • 1 onion, finely chopped
  • 3–4 garlic cloves, minced
  • 300 g mushrooms, sliced (button, cremini, or mixed)
  • 1 tbsp flour
  • 1 tbsp Worcestershire sauce (optional but delicious)
  • 1 tsp paprika
  • 1 cup chicken broth (250 ml)
  • 1 cup heavy cream or 1 cup sour cream (choose your preference)
  • 1–2 tsp Dijon mustard
  • Fresh parsley, chopped

For serving:

  • Egg noodles, pasta, rice, or mashed potatoes
  • Optional: extra parsley for garnish

Instructions

1️⃣ Cook the Chicken

  1. Season sliced chicken with salt and pepper.
  2. Heat butter + oil in a large pan.
  3. Cook chicken until lightly golden (about 5–7 minutes).
  4. Remove and set aside.

2️⃣ Cook the Mushrooms

  1. In the same pan, add a little more butter if needed.
  2. Add mushrooms and cook until browned.
  3. Add onions and sauté until soft.
  4. Add garlic and cook 1 minute.

3️⃣ Make the Creamy Sauce

  1. Sprinkle flour over mushrooms and mix.
  2. Add paprika + Dijon + Worcestershire.
  3. Pour in chicken broth slowly, whisking to avoid lumps.
  4. Let simmer 2–3 minutes until thickened.
  5. Add heavy cream or sour cream.
  6. Return chicken to the pan and cook another 5 minutes.

4️⃣ Serve

Spoon the creamy stroganoff over buttered egg noodles or rice.

Garnish with fresh parsley.
