Sizzling Garlic Butter Steak Bites with Creamy Sauce


 

Ingredients

For the Steak Bites:

  • 1 ½ lbs sirloin, ribeye, or strip steak, cut into 1-inch cubes
  • 3 tbsp butter, divided
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt & black pepper (to taste)
  • 1 tsp smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)

For the Creamy Sauce (optional but amazing):

  • 1 tbsp butter
  • 1 small shallot (or onion), finely chopped
  • 2 garlic cloves, minced
  • 1 cup heavy cream (or half & half for lighter version)
  • ½ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • Salt & black pepper (to taste)

Instructions

1. Prepare the Steak Bites

  1. Pat steak cubes dry with paper towels (helps with browning).
  2. Season generously with salt, pepper, and smoked paprika.
  3. Heat a large skillet (cast iron works best) over medium-high heat.
  4. Add olive oil and 1 tbsp butter.
  5. Once hot and sizzling, add steak bites in a single layer (work in batches so they sear, not steam).
  6. Sear 2–3 minutes per side until golden brown and cooked to your liking. Remove and set aside.

2. Make Garlic Butter

  1. Reduce heat to medium.
  2. Add remaining 2 tbsp butter and minced garlic.
  3. Stir for 30 seconds until fragrant (don’t burn the garlic).
  4. Return steak bites to skillet and toss in the garlic butter.

3. Optional Creamy Sauce

  1. In a separate pan, melt butter and sauté shallot + garlic until soft.
  2. Stir in heavy cream and bring to a gentle simmer.
  3. Add Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Simmer 2–3 minutes until slightly thickened.

4. Serve

  • Pour the creamy sauce over the steak bites or serve it on the side for dipping.
  • Garnish with fresh parsley.

  • Serve with mashed potatoes, rice, pasta, or crusty bread.
  • Add sautéed mushrooms or spinach for extra flavor.
