Cheesy Mashed Potato Puffs
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup milk
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: a pinch of garlic powder or paprika for extra flavor

- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Lightly grease a muffin tin or line with paper muffin cups.
- Mix Ingredients:
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, salt, and pepper.
- Mix until smooth and fully combined.
- Fill Muffin Tins:
- Spoon the mixture evenly into the prepared muffin tin (about ¾ full per cup).
- Optionally, sprinkle extra cheese or breadcrumbs on top for a crispy topping.
- Bake:
- Bake for 25–30 minutes, or until golden brown and puffed up.
- Let cool for 5 minutes before removing from the tin.
