Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup milk
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: a pinch of garlic powder or paprika for extra flavor

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a muffin tin or line with paper muffin cups.
  2. Mix Ingredients:
    • In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, salt, and pepper.
    • Mix until smooth and fully combined.
  3. Fill Muffin Tins:
    • Spoon the mixture evenly into the prepared muffin tin (about ¾ full per cup).
    • Optionally, sprinkle extra cheese or breadcrumbs on top for a crispy topping.
  4. Bake:
    • Bake for 25–30 minutes, or until golden brown and puffed up.
    • Let cool for 5 minutes before removing from the tin.
  5. Serve:
